There is a lack of superlatives for describe alexandre Mazzia's work at AM, his table installed in a chic and residential area not far from the Velodrome stadium. Genuine chief artist in perpetual motion, bringing the small portion to the rank of art, he plays with virtuosity of spices, roasted and smoked, irrigating his kitchen with his childhood memories in congo. Between his hands, everything goes beyond the gastronomic framework as we know it, but, most importantly, everything makes sense! Like these trout eggs and wild salmon, smoked milk with roasted hazelnuts, a dish of a rare intensity, or these breaded langoustines with sesame seeds and bonito, lemon-geranium condiment and seaweed popcorn, a pure wonder. The few veinards of the day are embarked in a taste adventure of a unique kind, enhanced by perfect service.
