THE SHUTTLE OVEN
It's the oldest bakery in Marseille!
Located on rue Sainte, on the sacred road that leads to the Abbey of Saint Victor, it belongs to the Master Artisan Baker Jean-Claude Imbert and his son Nicolas, who for more than 200 years have held the secret of the recipe for "La Navette", a Marseille tradition since 1781.
The vaulted kiln, built at the end of the eighteenth century, is still in operation today, and allows the incomparable quality of the famous shuttles to be obtained, and it is exclusively dedicated to them.
The people of Marseille, because they are greedy and love the delicate smell of orange blossom, are attached to it.
And every year, Candlemas is celebrated at the Four des Navettes!
The octave of Candlemas begins on February 2, at 5 a.m., with the procession of the Black Madonna. The start of the procession was given on the Quai des Belges and went up to the Abbey of Saint-Victor. On the square in front of the Abbey, the Archbishop of Marseille, in the presence of the Mayor, blessed the city, the sea and the green candles of the Abbey, then celebrated the solemn Mass of the Candlemas celebrations.
At 8 a.m., the Archbishop comes to the Four des Navettes to bless the oven, the famous shuttles, those who make them, those who sell them and those who eat them!
Do you know the lucky tandem of the Four des Navettes? Keep a shuttle that has received the blessing of the Archbishop as well as a green candle until the next Candlemas to bring good luck to the whole family. A year later, burn the candle and eat the rapeseed, because it can be kept for a whole year!
On Candlemas Day, hundreds of people are present to buy the blessed shuttles and taste them. So see you on February 2 at 8 a.m.!
The Saint Victor shuttle is a boat-shaped delicacy, golden and slightly sweet, delicately flavored with orange blossom.
It can be enjoyed naturally crunchy, slightly warmed, or just out of the oven. And can be kept without deterioration for a whole year.

And in particular the pompe à l'huile, specialties made with olive oil, which are part of the Provençal tradition of the thirteen Christmas desserts.
